Lentil and Bacon Soup

  • 1 large onion, chopped
  • 2 cloves of garlic, crushed
  • 2 sticks of celery, chopped
  • 1 large carrot, chopped
  • 1 cup (190g) of brown lentils (dried), rinsed
  • 8 slices of bacon (all fat removed)
  • 8 cups (approx 2 litres) of vegetable stock
  • 4 tablespoons of tomato paste
  • 2 teaspoons of mixed herbs
  • splash of balsamic vinegar
  • splash of Worcestershire sauce
  • salt and pepper to season
  • fresh chopped Italian parsley
  • olive oil spray
