- Spray a large saucepan over a medium-high heat with some olive oil spray
- Add the bacon, fry until golden and remove and set aside.
- Add the onion, garlic, celery and carrots and fry for about 5 mins.
- Add the lentils, tomato paste, stock, herbs, balsamic vinegar, Worcestershire sauce and bring to a boil. Reduce heat, then cover and simmer for 1 hour.
- Add back in the bacon and continue to simmer for about 20 mins.
- Stir in some chopped Italian parsley and season with salt and black pepper as required.
- Serve and Enjoy!!
