Preheat oven to 200°C (fan 180°C) / Gas 6.

Spray a frying pan with low-calorie spray and cook bacon until just starting to brown. Remove from heat and chop into smaller pieces.

Lay one sheet of filo on a clean surface and lightly spray or brush with cooking spray or oil.

Place another sheet on top and repeat spraying—layer 2 sheets together.

Cut layered filo sheets into 4 squares (about 12x15cm each).

Place a portion of bacon and cheese on one half of each square. Season lightly.

Fold over to form a triangle and press edges firmly to seal (use a fork or fingers).

Brush the tops with beaten egg white for shine.

Place on a lined baking tray and bake for 18–20 mins until golden and crisp.

Cool slightly before serving.

Keep unused filo covered with a damp tea towel to prevent drying out.

Add finely chopped spring onions or herbs to the filling for extra flavour.
