Carrot Cake

Instructions

  1. Preheat the oven to 160°C fan.
  2. In a bowl, combine the oats, egg, Müller Light yogurt, grated carrot, vanilla extract, baking powder, and plenty of cinnamon.
  3. Lightly spray a small baking dish with cooking spray and pour in the mixture.
  4. Bake for 20–25 minutes, or until set and lightly golden.
  5. Leave to cool completely, then place in the fridge to chill.

Prepare the Filling

Mix the protein natural yogurt with a drizzle of Billionaire’s Shortbread syrup until smooth.

Make the Frosting

In a small bowl, mix together the Philadelphia Lightest, protein natural yogurt, sweetener, and vanilla extract until creamy.

Assemble

  1. Once chilled, carefully slice the baked oats in half.
  2. Spread the yogurt filling over one half and place the other half on top.
  3. Cover with the frosting mixture.
  4. Finish with an extra sprinkle of cinnamon and a drizzle of syrup.

Recipe Notes

  • For the best texture, allow the baked oats to chill before assembling.
  • Add raisins, nuts, ginger, or chocolate chips to create your own version.
  • Perfect for meal prep and can be made the night before.
