Instructions
- Cook the pasta according to the packet instructions, then drain and set aside.
- Meanwhile, heat a large frying pan over medium heat and spray with low-calorie cooking spray.
- Add the lean beef mince and season with salt, black pepper, garlic powder, smoked paprika, oregano, and a little mild chilli powder. Cook until browned.
- Add the chopped bacon and cook for a few minutes until lightly coloured.
- Stir in the diced red onion and cook until softened.
- Add the tomato purée and diced tomatoes and cook for a few minutes until the tomatoes begin to break down and create a sauce.
- Stir through the diced gherkins and sliced spring onions.
- Add the cooked pasta and mix everything together until fully coated.
- Just before serving, stir through the grated cheese until melted, gooey, and delicious.
- Serve hot with extra salad or vegetables if desired.
