Chicken, Bacon & Pesto Pasta

Instructions

  • Boil pasta & broccoli
    Bring a pot of salted water to a boil. Add the fusilli and cook according to the packet (about 9–11 minutes).
    In the last 3–4 minutes, add the broccoli florets to the same pot.
    Drain everything and set aside (keep a little pasta water if needed).

  • Cook the bacon
    Heat a non-stick pan over medium heat.
    Add the sliced bacon medallion and cook for 2–3 minutes until slightly crispy.

  • Cook the chicken
    Add the diced chicken breast to the same pan.
    Cook for 5–7 minutes, stirring occasionally, until golden and fully cooked through (no pink inside).

  • Add onion
    Add the chopped onion (and garlic if using).
    Cook for 3–4 minutes until soft and slightly translucent.

  • Combine everything
    Add the drained pasta and broccoli to the pan.
    Stir in the red pesto and mix well until everything is evenly coated.
    Add a splash of reserved pasta water if it feels dry.

  • Season & serve
    Season with salt, pepper, and optional chili flakes.
    Mix once more and serve hot.
