  • Juice of 1 lime
  • 500g diced skinless chicken breast
  • 2 tbsp fat-free natural yogurt
  • 200g cooked long-grain rice (preferably cold to prevent sticking)
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 red onion, diced
  • 2 tsp smoked paprika
  • 1 tsp minced garlic
  • 1 chicken stock cube (check for low-calorie options)
  • 125ml water
  • 3 tbsp tomato puree
  • Frylight (low-calorie cooking spray)
