Chicken with Creamy Mushroom Sauce

Ingredients

  • 2 boneless skinless chicken breasts, raw (approx 170g each)
  • ½ onion, finely chopped
  • 2 cloves of garlic, crushed
  • 200g (7oz) of mushrooms, sliced
  • ⅓ cup (80ml) of coconut milk, canned (or can use single cream or half and half)
  • ⅔ cup (180ml) of chicken stock
  • 1 teaspoon of wholegrain mustard
  • 1 tablespoon of cornstarch, arrowroot or tapioca flour
  • salt and black pepper to season
  • low calorie spray
