Chicken Fried Rice

- 500g diced chicken breasts
- 200g long-grain rice (uncooked weight), cooked and left to go cold
- 200g peas
- handful of mushrooms finely sliced

1/2 onion finely diced

1 tbsp soy sauce

1 clove of garlic, finely chopped

A pinch of salt

Low calorie cooking spray

1 egg
Instructions
- Spray a frying pan with low calorie cooking spray. Add the chicken and fry off until cooked.

Then add the peas, onions and mushrooms and any other veg you would like to add.

Finally add the rice, soy sauce, salt and pepper, spray with fry light and fry for 5 minutes.

If the rice is looking pale, add some more soy sauce.

Move the rice to one half of the pan, then crack in an egg to the other half.
- Slowly mix the egg in with the rice until the egg is cooked through and is mixed with the rice.
