- Pour the Pepsi Max into a saucepan and heat gently while whisking to remove the fizz. Continue until it stops bubbling. Do not let it boil.
- Add the sugar-free lemon cordial and keep the heat low.
- Slowly sprinkle in the gelatine while whisking continuously until fully dissolved. Turn off the heat.
- Stir in the lemon juice, lime juice, vanilla extract, cinnamon, and citric acid.
- Pour the mixture into moulds or ice cube trays.
- Refrigerate for at least 60 minutes, or until fully set.
- Remove from the moulds and serve.
Optional: For extra fizzy, sour sweets, lightly sprinkle a small amount of citric acid over the gummies after de-moulding. Use no more than ½ tsp across the whole batch.
