Copycat Boardwalk Blueberry Lemon Scones

Instructions

Air Fryer Method

  1. Preheat air fryer to 200°C.

  2. In a bowl, mix the Ready Brek, yoghurt, baking powder, and lemon juice until combined.

  3. Gently fold in the fresh blueberries.

  4. Turn the mixture out onto a board and shape into two triangles.

  5. Brush the tops lightly with milk and sprinkle with Canderel.

  6. Air fry for 12 minutes, until golden and cooked through.

  7. Allow to cool slightly before serving.

Oven Method

  1. Preheat oven to 200°C (180°C fan).

  2. Line a baking tray with baking paper.

  3. Mix the Ready Brek, yoghurt, baking powder, and lemon juice until combined.

  4. Fold in the blueberries and shape into two triangles on the tray.

  5. Brush with milk and sprinkle with Canderel.

  6. Bake for 15–18 minutes, until golden and firm to the touch.

Perfect served with Greek yoghurt topped with raspberries, strawberries, blueberries, and 10g of granola for crunch.
