DIJON PORK

  1. Spray a large frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and fry for 10–15 minutes, stirring occasionally, until softened and golden. Add the garlic and slices of pork. Seal the pork for 1–2 minutes on each side.
  2. Add the mushrooms, stock, Dijon mustard, and mustard powder. Stir and simmer uncovered over a medium heat for 25–30 minutes, until the pork juices run clear. Turn the pork over halfway through cooking.
  3. Take the frying pan off the heat and stir in the reduced-fat cream cheese until completely blended. Season to taste. Stir in the flat-leaf parsley and serve immediately.
