  • 1 onion, peeled and thinly sliced
  • 400g skinless, boneless chicken thighs (visible fat removed), cut into chunks
  • 2 garlic cloves, peeled and finely chopped or grated
  • 3cm (1¼in) piece of root ginger, peeled and finely chopped or grated
  • 1 tbsp garam masala
  • ¼ tsp ground turmeric
  • Pinch of ground cinnamon
  • 1 medium courgette, finely chopped
  • 150g white mushrooms, finely chopped

  • Juice of ½ lemon
  • 2 tbsp ground almonds
  • 1 chicken stock cube
  • 100g low-fat cream cheese
  • 2 peppers (any colour), deseeded and sliced
