Lighter Bread and Butter Pudding

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, whisk together the eggs, Greek yogurt, sweetener, vanilla essence, and cinnamon until smooth.
  3. Lightly spray the bread slices with fry spray.
  4. Cut each slice in half and place them in a small ovenproof dish.
  5. Pour the egg mixture evenly over the bread.
  6. Sprinkle the sultanas on top.
  7. Leave the dish to stand for a few minutes so the bread absorbs the mixture.
  8. Bake for 20–25 minutes until the mixture is set and lightly golden on top.
