Instructions
- Add the whey protein powder, almond milk, and frozen mango to a blender. Blend until completely smooth with no fruit pieces remaining.
- Transfer the mixture to a stand mixer or use an electric hand mixer. Whisk on high speed for around 5 minutes until the mixture becomes pale, fluffy, and increased in volume.
- In a small bowl or jug, dissolve the sugar-free jelly crystals in 100ml boiling water and stir until fully dissolved.
- Reduce the mixer speed slightly and slowly pour in the dissolved jelly mixture while continuing to whisk. Once added, increase the speed again and whisk for another minute until thick and airy.
- Taste and add extra sweetener if desired.
- Pour into a large serving dish or individual pots and refrigerate for 15 minutes until lightly set.
Serve chilled and enjoy this thick, fluffy, mousse-like dessert straight from the fridge.
