Marbled Cookies

Instructions

  1. Melt the baking chocolate over a bain-marie (a heatproof bowl over a pan of water) or in the microwave in short bursts.
  2. Mix the orange extract into the melted chocolate. Taste test and add a little more extract if you want a stronger orange flavour.
  3. Cream the butter and sugar together until pale and fluffy — the fluffier, the better.
  4. Mix in the egg and vanilla extract.
  5. Sift in the flour and baking powder, then fold until just combined.
  6. Divide the mixture into two halves.
  7. Mix the melted chocolate into one half of the dough.
  8. Roll each half into a sausage shape, then squidge them together to create a marbled effect.
  9. Wrap the dough in cling film and chill in the freezer for at least 30 minutes.
  10. Slice into thin rounds and bake for around 10 minutes at:
  • Gas Mark 4
  • 180°C
  • 160°C fan
