Instructions

  1. 1️⃣ Preheat & Prep:

    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish.

    2️⃣ Cook the Meat:

    • In a skillet over medium heat, cook the ground beef (or shredded chicken) until fully cooked.
    • Drain excess fat, then stir in taco seasoning and Rotel. Simmer for 2-3 minutes.

    3️⃣ Make the Sauce:

    • In a mixing bowl, combine cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until smooth.

    4️⃣ Assemble the Casserole:

    • Layer half of the crushed tortilla chips in the bottom of the baking dish.
    • Spread the meat mixture evenly over the chips.
    • Pour the creamy sauce over the top, then sprinkle with shredded cheese.

    5️⃣ Bake to Perfection:

    • Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.

    6️⃣ Garnish & Serve:

    • Let the casserole cool for a few minutes.
    • Top with jalapeños, cilantro, tomatoes, or avocado if desired.
