1️⃣ Preheat & Prep:
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
2️⃣ Cook the Meat:
- In a skillet over medium heat, cook the ground beef (or shredded chicken) until fully cooked.
- Drain excess fat, then stir in taco seasoning and Rotel. Simmer for 2-3 minutes.
3️⃣ Make the Sauce:
- In a mixing bowl, combine cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until smooth.
4️⃣ Assemble the Casserole:
- Layer half of the crushed tortilla chips in the bottom of the baking dish.
- Spread the meat mixture evenly over the chips.
- Pour the creamy sauce over the top, then sprinkle with shredded cheese.
5️⃣ Bake to Perfection:
- Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
6️⃣ Garnish & Serve:
- Let the casserole cool for a few minutes.
- Top with jalapeños, cilantro, tomatoes, or avocado if desired.
- Serve warm and enjoy!
