- Preheat oven to 180°C (fan 160°C).
- Spray a 12-hole muffin tin with low-calorie spray.
- Place a filo square into each hole, shaping it like a tart case. Spray lightly with oil and bake for 5 minutes until crisp.
- Put ½ tsp jam into each case.
- In a bowl, whisk together eggs, ground almonds, sweetener, flour, and almond extract until smooth.
- Spoon the mixture evenly over the jam.
- Sprinkle a few flaked almonds on top.
- Bake for 15–18 minutes until golden and set.
- Cool slightly, then enjoy warm or cold.
