Mini Bakewell Tarts

Instructions

  1. Preheat oven to 180°C (fan 160°C).
  2. Spray a 12-hole muffin tin with low-calorie spray.
  3. Place a filo square into each hole, shaping it like a tart case. Spray lightly with oil and bake for 5 minutes until crisp.
  4. Put ½ tsp jam into each case.
  5. In a bowl, whisk together eggs, ground almonds, sweetener, flour, and almond extract until smooth.
  6. Spoon the mixture evenly over the jam.
  7. Sprinkle a few flaked almonds on top.
  8. Bake for 15–18 minutes until golden and set.
  9. Cool slightly, then enjoy warm or cold.
