- Pre-heat the oven to 200°C.
- Place all the filling ingredients into a saucepan. Cook over a medium heat for 10 minutes, until the apple begins to soften.
- While the filling is cooking, spray the muffin tray with low calorie cooking spray.
- Cut rounds out of the pastry using a cookie cutter or a mug. Push them into the muffin tray to make the pie cases.
- When the filling is ready, spoon it into the pastry.
- Use the leftover pastry to make lattices or cut shapes to place on the top of the pies. If you prefer you can leave the tops naked!
- Spray any pastry on the top of the pies with low calorie cooking spray and place into the oven for 20 minutes, or until the pastry is cooked and golden.
- You can serve these hot or cold, just let them cool for 10 minutes after you take them out of the oven as they will be very hot!
