Mini White Chocolate & Strawberry Scones

Instructions

  1. Add the oats, egg, yogurt, baking powder, sweetener and white chocolate flavouring to a bowl and mix until fully combined.
  2. Spray a large mug or ramekin with low-calorie cooking spray.
  3. Spoon the mixture into the prepared dish.
  4. Microwave on high for approximately 2 minutes.
  5. If the mixture begins to rise too much during cooking, briefly open the microwave door for a few seconds before continuing.
  6. Remove from the microwave and carefully turn out onto a cooling rack or plate.
  7. Leave to cool completely.
  8. Slice in half and spread with the white chocolate spread and strawberry jam.
  9. Top with sliced strawberries and serve.
