Preheat the oven to medium heat (around 180°C).

Spray a baking dish with Frylight. Thinly slice the sweet potato and line the base and sides of the dish, overlapping the slices to cover any gaps. Season with salt and pepper and spray lightly with more Frylight.

Bake for around 20 minutes, until the sweet potato is slightly tender.

Meanwhile, whisk the eggs and stir in the cottage cheese. Add the chopped ham, sliced leek, and fresh mint, mixing well.

Pour the egg mixture over the sweet potato base.

Return to the oven and bake until the eggs are fully set and lightly golden on top.
