Rocky Road Marshmallow Cakes

Instructions

  1. Melt the milk chocolate gently in the microwave or over a bowl of simmering water until smooth.
  2. Drizzle half of the melted chocolate into a silicone loaf mould or lined tin.
  3. Scatter over half of the mini marshmallows and set aside.
  4. Place the jumbo marshmallows into a microwave-safe bowl and microwave for around 1 minute until melted and fluffy.
  5. Quickly stir in the chocolate rice cereal until fully coated.
  6. Spoon the marshmallow cereal mixture into the mould and spread evenly. Slightly wetting the back of the spoon helps smooth the mixture more easily.
  7. Scatter over the remaining mini marshmallows.
  8. Drizzle over the remaining melted chocolate.
  9. Place into the fridge for at least 30 minutes until firm.
  10. Slice into 24 bars and serve.

Best stored in the fridge for a firmer texture.
