Slimming-Friendly Brownies

Instructions

  1. Preheat the oven to Gas Mark 4 (180°C / 160°C fan).
  2. In a large bowl, mix together the vanilla extract, cocoa powder, sweetener, and 6 egg yolks until combined.
  3. In a separate clean bowl, whisk the 6 egg whites until stiff peaks form.
  4. Gently fold the egg whites into the chocolate mixture until fully combined and airy.
  5. Pour the mixture into a lined baking tin and spread evenly.
  6. Bake for 25–30 minutes until set on top but still slightly soft in the centre.
  7. Leave to cool before slicing into brownies.
