Slimming Friendly Chocolate Cake (brownies)

Instructions

  1. Preheat your oven to 180°C / 350°F / Gas Mark 4. Whisk together the eggs and sweetener until thick and pale. Beat in the low-fat spread and vanilla extract.
  2. Sift the flour, cocoa powder, baking powder and salt, then fold into the egg mixture. Spray an 8in / 20cm square cake tin with Fry Light and pour in the brownie mixture. Scatter the chopped almonds over the top.
  3. Bake until cooked through, then leave to cool for 10 minutes before cutting into 15 squares. Serve warm or allow to cool completely.
