Preheat oven to 180°C (fan 160°C / gas mark 4). Line a round cake tin or use two smaller sandwich tins with baking paper.

Separate the eggs – whites in one bowl, yolks in another.

Whisk egg whites (with cream of tartar if using) until they form stiff peaks.

In a separate bowl, beat the yolks with sweetener and vanilla until pale and fluffy.

Gently fold the flour into the yolk mixture.

Carefully fold in the egg whites in batches, keeping as much air as possible.

Pour into the tin(s) and bake for about 18–20 minutes, or until golden and springy to touch.

Let it cool completely on a wire rack.

Spread yogurt/quark and berries between two layers or on top.
💡 Slimming World Tips:

Flour is the only ingredient that carries syns in this recipe unless your sweetener is synned (some are negligible).

Avoid sweetened yogurt or flavored quark to keep syns low.

You can add 1 tbsp cocoa powder (1 syn) to make it chocolatey.
