Slimming World–friendly crumpets

Instructions

  1. Activate the yeast

    • Mix the warm milk, warm water, sugar, and yeast in a jug.

    • Leave for 10 mins until frothy.

  2. Make the batter

    • In a large bowl, mix flour and salt.

    • Pour in the yeast mixture and whisk until smooth.

    • Cover with a tea towel and leave in a warm place for 30 mins until bubbly.

  3. Cook the crumpets

    • Heat a non-stick frying pan over medium heat and lightly spray with low-calorie spray.

    • Place greased crumpet rings in the pan.

    • Spoon batter in to about 1.5cm deep.

    • Cook for 5–6 mins until bubbles appear and tops start to dry.

    • Flip carefully and cook for 1–2 mins to set.

  4. Serve

    • Enjoy warm with a light spread of low-fat cream cheese, sugar-free jam, or a spray of butter flavouring.


💡 Notes:

  • Gluten-free: Swap for GF bread flour, adding 20–30ml more water if needed.

  • Batch freeze: Cool, then freeze in a single layer. Toast straight from frozen

  • Flavour twist: Add cinnamon, mixed spice, or vanilla to the batter for a sweet variation.
