Instructions

Activate the yeast

Mix the warm milk, warm water, sugar, and yeast in a jug.

Leave for 10 mins until frothy.

Make the batter

In a large bowl, mix flour and salt.

Pour in the yeast mixture and whisk until smooth.

Cover with a tea towel and leave in a warm place for 30 mins until bubbly.

Cook the crumpets

Heat a non-stick frying pan over medium heat and lightly spray with low-calorie spray.

Place greased crumpet rings in the pan.
Advertising -
Spoon batter in to about 1.5cm deep.

Cook for 5–6 mins until bubbles appear and tops start to dry.

Flip carefully and cook for 1–2 mins to set.

Enjoy warm with a light spread of low-fat cream cheese, sugar-free jam, or a spray of butter flavouring.

💡 Notes:

Gluten-free: Swap for GF bread flour, adding 20–30ml more water if needed.

Batch freeze: Cool, then freeze in a single layer. Toast straight from frozen

Flavour twist: Add cinnamon, mixed spice, or vanilla to the batter for a sweet variation.
