Southwest Veggie Quesadillas

Instructions

  1. Preheat a non-stick skillet over medium heat, spraying lightly with low calorie spray if needed.
  2. In a bowl, mix the black beans, corn, and tomatoes, seasoning with salt and pepper.
  3. Spread a quarter of the mashed avocado on one half of each wrap.
  4. Top the avocado with the bean, corn, and tomato mixture, and sprinkle with cheese.
  5. Fold each wrap in half and place in the skillet. Cook for about 3-4 minutes on each side until golden and crispy.
  6. Serve with lime wedges and sriracha or hot sauce on the side, if desired.
