    1 onion, peeled and finely diced
    2 garlic cloves, peeled and crushed
    650ml vegetable stock
    (1 vegetable stock cube dissolved in 650ml boiling water)
    50g reduced-fat cream cheese
    200g orzo
    30g Parmesan cheese, finely grated
    75g baby spinach
    freshly ground black pepper, to taste
