Instructions

  1. Crush the Alpen shortbread bars and evenly divide them between two small jars or dessert cups, pressing down gently to form the base.
  2. Mash half of the raspberries and layer them over the shortbread base.
  3. Spoon the Alpro Greek style yogurt over the raspberry layer, smoothing the top.
  4. Spread the remaining mashed raspberries over the yogurt layer.
  5. Cut the French fancie in half and place one half on top of each cheesecake as a garnish.
  6. Chill in the refrigerator for at least 10 minutes before serving to allow flavors to meld.

Chef’s Tips

  • For added flavor, mix a little vanilla extract into the yogurt before layering.
  • Use frozen raspberries if fresh ones are unavailable, just make sure to thaw them first.
  • For a more decadent treat, drizzle with a sugar-free raspberry syrup before serving.
