- Preheat the oven to 180°C.
- Peel and chop the sweet potatoes into small pieces, then boil until tender.
- Drain, mash well, and allow to cool.
- In a bowl, mix all the remaining ingredients together.
- Add the cooled sweet potato and whisk for 2–3 minutes until smooth.
- Pour the mixture into a lined brownie tin.
- Bake in the centre of the oven for 25 minutes.
- Allow to cool, then slice into 20 pieces.
