Sweet Potato Brownies

Instructions

  1. Preheat the oven to 180°C.
  2. Peel and chop the sweet potatoes into small pieces, then boil until tender.
  3. Drain, mash well, and allow to cool.
  4. In a bowl, mix all the remaining ingredients together.
  5. Add the cooled sweet potato and whisk for 2–3 minutes until smooth.
  6. Pour the mixture into a lined brownie tin.
  7. Bake in the centre of the oven for 25 minutes.
  8. Allow to cool, then slice into 20 pieces.
