- Preheat oven to 180°C (fan 160°C) / Gas 4.
- Spray a small ovenproof dish (around 18–20cm) with low-calorie spray.
- Press the tortilla into the dish to form the base, folding edges if needed. Spray lightly with cooking spray.
- In a bowl, whisk the eggs and cottage cheese together until smooth. Season with salt and pepper.
- Pour the mixture into the tortilla base and arrange your chosen toppings over the top.
- Sprinkle with mozzarella.
- Bake for 25–30 mins, until set in the middle and golden on top.
- Allow to cool slightly before slicing.
