VIKING’S TOAST

  1. Spray a small frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and fry for 2–3 minutes, until softened and beginning to colour.
  2. Place the cooked onion in a small bowl and add the cheese, Henderson’s relish or Worcestershire sauce, mustard powder, egg white, milk, sea salt and black pepper. Mix well.
  3. Preheat the grill to medium heat. Place the bread on the grill pan rack and place under the grill until lightly toasted on one side. Remove from under the grill.
  4. Turn the toast over and evenly spread the cheese and onion mixture over the untoasted side. Place back under the grill for 3–4 minutes, until the cheese has melted and is golden-brown. Serve at once.
