Weetabix Muffins

Instructions

  1. Preheat the oven to 180°C (160°C fan).

  2. Crush the Weetabix into a bowl until fine.

  3. Add the quark, sweetener, caramel essence, baking powder, and egg. Mix well until fully combined and smooth.

  4. Spoon the mixture evenly into lined cake cases.

  5. Bake for 12–15 minutes, or until set and lightly golden.

  6. Allow to cool slightly, then top each muffin with 1 teaspoon of chocolate spread if desired.
