White Chocolate, Biscoff & Banana Bread

  • Preheat the oven to 180°C and line or lightly spray a loaf tin.
  • In a bowl, mix the flour, baking soda, cinnamon and sweetener.
  • In another bowl, mash the bananas, then add the eggs and vanilla essence and mix well.
  • Gradually combine the dry ingredients with the banana mixture and whisk until smooth.
  • Fold in 30 g of the white chocolate, then pour the batter into the prepared loaf tin.
  • Bake for 20–25 minutes, or until the cake is set and lightly golden.
  • Melt the remaining white chocolate with the Biscoff spread and spoon over the cooled cake.
  • Sprinkle the crumbled Biscoff biscuit on top before serving.
