- Blend the base:In a blender or food processor, combine the cottage cheese, protein powder, sugar-free pudding mix, sugar-free syrup, vanilla extract, milk, and mashed banana (if using). Blend until completely smooth and creamy
- Taste & adjust:
Taste the mixture and adjust sweetness with a touch more syrup or sweetener if needed. - Chill:
Pour the pudding into 2 small dessert glasses or jars. Refrigerate for at least 30 minutes to set and thicken. - Add toppings:
Just before serving, sprinkle with crushed light wafers, a swirl of whipped topping, and extra banana slices.
