Instructions
- Prepare the Vegetables: Wash and slice all vegetables. Set aside.
- Make the Sauce: In a small bowl, mix all sauce ingredients, including cornstarch slurry. Stir well.
- Stir-Fry:
- Heat 1 tsp olive oil (or use a few sprays) in a pan or wok over medium-high heat.
- Add garlic and ginger, stir for about 30 seconds until fragrant.
- Add carrots and stir-fry for 2 minutes.
- Add broccoli and mushrooms, cooking for another 3-4 minutes until tender-crisp.
- Combine Everything: Pour the sauce over the vegetables. Stir well and let it simmer for 1-2 minutes until slightly thickened.
- Serve & Enjoy: Garnish with green onions and sesame seeds. Serve on its own or with brown rice, quinoa, or cauliflower rice for a low-carb option.
