- Preheat your oven to 180°C (356°F).
- Cook the pasta according to package instructions, then drain and set aside.
- In a large skillet, cook the chicken breasts over medium heat until golden and cooked through. Remove and slice into strips.
- In the same skillet, add the chopped red onion, red pepper, and garlic. Sauté until softened.
- Add the Cajun spices and stir well to coat the vegetables.
- Mix in the Philadelphia Lightest and chicken stock, stirring until smooth and combined.
- Add the cooked pasta and chicken to the skillet, tossing everything together to coat in the sauce.
- Transfer the pasta mixture to a baking dish. Sprinkle diced pepperoni and mozzarella on top.
- Bake for 15 minutes until the cheese is melted and bubbly.
- Serve hot and enjoy!
