Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Cook the pasta according to package instructions, then drain and set aside.
  3. In a large skillet, cook the chicken breasts over medium heat until golden and cooked through. Remove and slice into strips.
  4. In the same skillet, add the chopped red onion, red pepper, and garlic. Sauté until softened.
  5. Add the Cajun spices and stir well to coat the vegetables.
  6. Mix in the Philadelphia Lightest and chicken stock, stirring until smooth and combined.
  7. Add the cooked pasta and chicken to the skillet, tossing everything together to coat in the sauce.
  8. Transfer the pasta mixture to a baking dish. Sprinkle diced pepperoni and mozzarella on top.
  9. Bake for 15 minutes until the cheese is melted and bubbly.
  10. Serve hot and enjoy!
