Add the oats, eggs, Kvarg, baking powder, and lemon essence (if using) to a blender. Blitz until smooth to form a batter.

Heat a good non-stick frying pan over medium heat and lightly spray with 1 cal rapeseed oil.

Pour small amounts of batter into the pan to form circles (cooking one at a time works best for even flipping).

Cook until bubbles begin to appear on the surface, then flip and cook the other side until golden and cooked through.

Repeat until all the batter is used (makes approximately 10 pancakes).

Serve with fresh strawberries and a tablespoon of lemon curd if desired.
