Instructions
- Add the onions, chicken, garlic, Mexican seasoning and chopped tomatoes to the slow cooker.
- Stir well, cover and cook on High for 2 hours 45 minutes.
- Add the chopped pepper, soured cream, dried pasta and chicken stock.
- Stir everything together, ensuring the pasta is covered by the liquid.
- Cover and cook on High for a further 40 minutes, or until the pasta is tender.
- Stir through the grated cheddar cheese until melted and fully combined.
- Serve immediately and enjoy.
