Mexican Pasta Bake

Instructions

  1. Add the onions, chicken, garlic, Mexican seasoning and chopped tomatoes to the slow cooker.
  2. Stir well, cover and cook on High for 2 hours 45 minutes.
  3. Add the chopped pepper, soured cream, dried pasta and chicken stock.
  4. Stir everything together, ensuring the pasta is covered by the liquid.
  5. Cover and cook on High for a further 40 minutes, or until the pasta is tender.
  6. Stir through the grated cheddar cheese until melted and fully combined.
  7. Serve immediately and enjoy.

Tip

  1. If the sauce thickens too much during the final stage of cooking, add a splash of extra stock or hot water before serving.
