Pepsi Max Chicken Noodles

  1. Fry diced chicken with Chinese 5 spice and salt until lightly browned. Remove and set aside.
  2. In the same pan, cook onion, mushrooms, garlic, and ginger for a few minutes.
  3. Add peppers and baby corn, cook briefly.
  4. Stir in tomato purée, soy sauce, Worcestershire sauce, vinegar, and Pepsi Max.
  5. Bring to a boil, then add stock pot and ½ Oxo cube.
  6. Return chicken and simmer 10–15 mins until sauce thickens.
  7. Add cooked noodles and spring onions, toss and heat through.
