  • 320g ready-rolled light puff pastry sheet (about 35 x 26cm / 14 x 9in)
  • 1 medium egg, beaten

  • ½ tsp dried basi
  • ½ tsp dried oregano
  • 40g reduced-fat mature Cheddar, finely grated
  • ¼ small red onion, peeled and sliced into thin strips
  • 8 thin slices of pepperoni
  • 6 cherry tomatoes, halved
  • 125g reduced-fat mozzarella, torn into pieces
  • 8 pitted black olives
  • Sea salt and freshly ground black pepper
  • A few fresh basil leaves, to serve
