Pizza Twists

Instructions

  1. Preheat the oven to 170°C Fan / 190°C / Gas Mark 5.
  2. Line two baking trays with baking parchment and lightly spray with low-calorie cooking spray.
  3. Place the chopped tomatoes, balsamic vinegar, oregano, basil, garlic, salt and pepper into a saucepan.
  4. Simmer for around 10 minutes, stirring occasionally, until thickened and reduced.
  5. Remove from the heat and strain the sauce through a sieve to create a smooth pizza sauce. Leave to cool completely.
  6. Unroll the puff pastry onto a clean work surface.
  7. Spread the cooled tomato sauce evenly over the pastry.
  8. Sprinkle the grated Parmesan over the sauce.
  9. Fold the pastry in half lengthways.
  10. Cut into 36 long, thin strips.
  11. Twist each strip several times and place onto the prepared baking trays, leaving space between each one.
  12. Brush each twist with beaten egg.
  13. Bake for approximately 20 minutes, or until puffed up and golden brown.
  14. Allow to cool slightly before serving.

Freezing Tip

These twists freeze brilliantly before baking. Simply prepare and twist the strips, freeze on a tray until firm, then transfer to a freezer bag. Bake from frozen, adding a few extra minutes to the cooking time.
