Instructions
- Preheat the oven to 170°C Fan / 190°C / Gas Mark 5.
- Line two baking trays with baking parchment and lightly spray with low-calorie cooking spray.
- Place the chopped tomatoes, balsamic vinegar, oregano, basil, garlic, salt and pepper into a saucepan.
- Simmer for around 10 minutes, stirring occasionally, until thickened and reduced.
- Remove from the heat and strain the sauce through a sieve to create a smooth pizza sauce. Leave to cool completely.
- Unroll the puff pastry onto a clean work surface.
- Spread the cooled tomato sauce evenly over the pastry.
- Sprinkle the grated Parmesan over the sauce.
- Fold the pastry in half lengthways.
- Cut into 36 long, thin strips.
- Twist each strip several times and place onto the prepared baking trays, leaving space between each one.
- Brush each twist with beaten egg.
- Bake for approximately 20 minutes, or until puffed up and golden brown.
- Allow to cool slightly before serving.

Freezing Tip
These twists freeze brilliantly before baking. Simply prepare and twist the strips, freeze on a tray until firm, then transfer to a freezer bag. Bake from frozen, adding a few extra minutes to the cooking time.
