Ploughman’s Quiche

Instructions

  1. Preheat your oven to 180°C/fan 160°C/gas 4.
  2. Spray a non-stick roasting tin lightly with low-calorie cooking spray and line with baking paper if needed.
  3. Whisk together the eggs, cottage cheese or fromage frais, ham strips and seasoning.
  4. Stir in the red onion and half of the grated cheese.
  5. Scatter over the cheese, cherry tomatoes and mixed olives.
  6. Evenly spoon over the chutney and pickle.
  7. Bake for 35–40 minutes until golden and cooked through.
  8. Leave to cool slightly before slicing and serving.
