Instructions
- Spray a frying pan with low-calorie cooking spray and cook the sliced peppers and onion over a medium heat for 5–6 minutes until softened.
- Meanwhile, cook the BBQ pulled pork according to the packet instructions.
- Stir the cooked pulled pork into the softened vegetables and mix well.
- Lay the tortilla flat and spread the pulled pork mixture over one half.
- Sprinkle the grated cheese evenly over the filling.
- Fold the tortilla over to create a half-moon.
- Place the quesadilla into a dry non-stick frying pan over medium heat. Cook for 2–3 minutes on each side until golden and crisp, with the cheese melted.
- Heat the Mexican rice according to the packet instructions.
- Toss together the salad leaves, cucumber, diced red pepper and red onion. Mix the Perinaise and Garlic & Herb Philadelphia together, then stir through the salad or serve as a dressing.
- Slice the quesadilla into wedges and serve alongside the Mexican rice and fresh salad.
