Smoky Meatball Pasta Bake

Instructions

  1. Preheat your oven to 200°C (180°C fan-assisted).
  2. In a large bowl, combine the beef mince, half of the chopped onion, half of the minced garlic, smoked paprika, salt, and pepper. Mix well and shape into meatballs.
  3. Spray a frying pan with low-calorie cooking spray and brown the meatballs over medium heat, then remove and set aside.
  4. In the same pan, sauté the remaining onion, garlic, and red bell pepper until soft.
  5. Add the chopped tomatoes and tomato puree, stirring to combine. Let simmer for 10 minutes.
  6. Meanwhile, cook the pasta according to package instructions, drain, and set aside.
  7. Mix the cooked pasta with the tomato sauce, then transfer to a baking dish.
  8. Place the meatballs on top of the pasta, sprinkle with grated cheese, and bake for 20 minutes or until the cheese is bubbly and golden.
  9. Garnish with fresh basil before serving.
